Do we have the option to allow the user to upload files while checking out? We need some documents from the user to complete the sale.

While there is no direct way to upload a file, you can upload it during checkout somewhere else, and save the file URL as a hidden field, or as a product metadata.
Besides that, if you believe we should offer the file hosting service please keep this feature request open.
