Have you tried overriding the payment-methods-list component? There is templating info for both the list and individual items in the theme reference doc:

I did try to override it. I even tried diabling it with <payment-methods-list disabled="true"> </payment-methods-list> but nothing is working I even added custom fields in the customer information fields but the payment list is not working for me
