If I uncheck ‘Notify me when a new order occurs’ (under Dashboard → Checkout & Cart), will this apply only to me (the logged in user) or to all users? Just want to be sure that if I uncheck, my client still receives those mails.

The “Notify me when a new order occurs” feature, when checked, is sending an email to all the emails linked to the account. That means that every user in your account that can connect to the dashboard will be notified.
If you wish to specify which emails receive a confirmation on customer orders, you can use the “Receive a copy of each invoice in BCC” :
Using this, you can manually enter which emails should be notified after a new order.
