Is it possible to use crypto as a custom payment in Snipcart? Has someone successfully implemented it?

It should be possible. You will have to implement your own integration with whichever crypto service (or your own wallet to wallet service).
You may also use deferred payment, which would make the process much more manual but simpler : add to your invoice emails instruction on how to pay you. Once you receive the crypto, change the order status.
