we are using custom payment gateway and still it is showing ‘Stripe’ in our order detail. Where we can change it to ‘Credit/Debit card’

When using the custom payment gateway, it’s not possible to display that card details such as last 4 digits, brand, etc. This is something that might change eventually though.
What we show in the cart is the name of the payment method returned by your integration, you could change the payment method name from Stripe to Credit/Debit card.
